Monte Solaio’s Re del Castello Merlot Reserve is a 100% Merlot wine. It displays a rich ruby-red color, an aromatic and floral flavor, and a finish that drifts gently to red fruit notes. The taste is tannic, soft and velvety. Each bottle is a charming discovery, a unique voyage through the balance of elements composing the winemaking environment of Val di Cornia. The harvest is done by hand in mid-September, choosing the best Merlot grapes. Next, a soft pressing in a stainless steel tank followed by the start of alcoholic fermentation at temperatures between 26–30° C for a week, followed by maceration for about 10–15 days. The wine is put into French oak barrels for malolactic fermentation (30% new oak). The refinement takes place for about 18 months in barrique and then, a minimum of six months in bottle before being put on the market.
