Olive harvest started in the Maremma region of Italy in November. No huge machines, no tree shakers, just traditional techniques using nets and a “rastrello.” After harvest, the olives go right to the olive mill. The pressed oil settles in several large stainless containers for a few weeks. This is naturally unfiltered olive oil — the best kind. Once it is ready, the bottling, labeling and shipping processes begin. By spring, this new harvest will be ready to share with you.
Each year, we offer a CSA option for purchasing our olive oil. With the CSA, you receive 3 liters of olive oil. This year we’ll be providing the olive oil in a tin that keeps the oil fresh, protecting it from exposure to both light and oxygen. Note that tin packaging is inherently fragile and prone to denting. All tins leave our partner in Italy in perfect condition and well-packaged, however, we cannot guarantee that there will not be some denting while in transit particularly during these challenging times when the courier services are overwhelmed. A dented tin is a cosmetic issue that does not affect the quality of the oil.
